Ingredients

  • 1 onion, sliced thickly
  • 2 c. milk or nondairy alternate
  • 1/2 c. gluten free bread crumbs (I pulse some gluten free bread in a food processor)
  • 1/2 c. rice or corn cereal, crushed
  • 1 1/2 tsp. gluten free Italian seasoning
  • salt to taste

Directions

1. Slice onion and soak in milk for a few hours.
2. Mix remaining ingredients together; toss onion rings in breading mixture
3. Bake 450 degrees for about 15 minutes.
4. Serve hot.
