Ingredients

  • 1 c. wild rice mix
  • 5 c. chicken or vegetable stock
  • 1 lb. broccoli, chopped (frozen or fresh)
  • 1-2 shredded carrots
  • 1/2 onion, chopped
  • 8 oz. cream cheese (I use the herb & garlic dairy-free kind--Tofutti brand)
  • seasonings to taste

Optional

  • 1 1/2 c. diced cooked chicken

My good friend, Carrie, gave me this recipe and I modified it to be allergen free. I served this at a dinner party recently and I had so many people asking for the recipe--they had no idea it was gluten & dairy free! I hope you like it as much as my kids and I like it.

Directions

1. Bring broth & rice mix to a boil; reduce heat to a simmer and let cook for about 5 minutes.
2. Add onion, broccoli, carrot & chicken (if using) & simmer for about 10 minutes.
3. Once veggies start to get tender, gradually mix in cream cheese until it melts.
4. Heat through, stirring to ensure you don't have clumps of cream cheese.
5. Serve with toast on a chilly day. Mmmmm!
