gluten/dairy-free coconut haystacks

Ingredients

  • 4 Tbs. coconut milk
  • 1/4 c. non-dairy butter
  • 2 1/2 c. powdered sugar
  • 3 c. shredded sweetened coconut
  • 6 oz. non-dairy chocolate chips

Note

My family got the original recipe for these candies from a family friend, and I have modified it to be dairy free. We make these candies every Christmas (my dad LOVES these!).

Directions

1. Heat butter and milk in a saucepan until bubbly. Remove from heat.
2. Quickly add powdered sugar, whisking in.
3. Stir in coconut.
4. Drop by the spoonful onto wax paper. Once all coconut mixture has been spooned out, form into haystack cone shapes. Let cool.
5. Once haystack cones are completely cooled and set, melt non-dairy chocolate chips over medium heat.
6. Dip bottoms of coconut candies in chocolate and place back on wax paper. Allow chocolate to completely harden and cool. Keep stored in refrigerator in a resealable bag or airtight container.
