Gluten Free Beer Battered Onion Rings

Ingredients
- 1 c. superfine rice flour
- 1 tsp. salt
- 1 tsp. onion powder
- 2 egg yolks (or 1 Tbs. flax meal mixed into 3 Tbs. warm water)
- 3/4 c. gluten free beer (I used Omission Pale Ale)
- 1 large sweet onion
- oil for frying
Note
I found this recipe on an index card at the Gluten Free Expo in Chicago. The original recipe calls for chili powder, cumin, and cayenne, but I like good old classic onion rings best! Modify seasonings to your personal preference.
Directions
1. | Slice onions into rings. | |
2. | In a bowl, mix rice flour, salt, egg yolks or flax meal mixture, and gluten free beer. Whisk & set aside. The batter should be thick, but still liquid. | |
3. | Heat fryer oil to 360. | |
4. | Once oil is hot, dip onions in batter, allowing excess to drip off. Add to fryer in small batches and fly until golden brown, about 3-5 minutes. | |
5. | Remove from fryer and place on cookie sheet lined with paper towels. | |
6. | Eat with the dipping sauce of your choice! |
