  • 1 onion, diced
  • 1 cup dairy free cheese, shredded
  • 1/2 cup dairy free sour cream
  • 1 1/2 cup cream of mushroom soup (see nondairy recipe )
  • 2 cups cooked quinoa
  • 2 cups frozen broccoli
  • salt & pepper to taste
  • pinch of nutmeg
  • 2 cups diced chicken (Can be left out for vegetarian/vegan option. )


1. Cook quinoa and set aside (1 c. quinoa to 1 1/2 c. water). I cook mine in my rice cooker so I don't have to babysit a pan on the stove.
2. Mix remaining ingredients in a add quinoa. Add a little nondairy milk if the casserole is too thick.
3. Bake at 350 until casserole is cooked through and the edges start to brown.
