gluten free chicken satay, Thai satay, curry


  • 3-4 chicken breasts, cut into strips
  • 1/2 c. tamari
  • fresh squeezed juice of one lime
  • 1 Tbs. brown sugar
  • 2 Tbs. gluten free curry powder
  • 4-5 cloves garlic, sent through press
  • sriracha hot sauce or other hot sauce, to taste


1. Mix all ingredients in a resealable bag; add chicken. Marinate at least a few hours or overnight.
2. Preheat grill and cook chicken until thoroughly cooked. You can also broil in an oven if you don't have a grill, turning half way through cooking.
3. Serve over rice with Thai cucumber salad. Top with peanut sauce (I use Thai Kitchen brand's mix).
