gluten free rhubarb cobbler

Ingredients

  • 1 c. rice OR almond flour
  • 3/4 c. gluten free oats
  • 1 c. brown sugar
  • 1/2 c. butter or non-dairy butter, melted
  • 1 tsp. cinnamon
  • 1 c. granulated sugar
  • 3 tbs. cornstarch OR arrowroot starch
  • 1 c. water
  • 4 c. chopped rhubarb (can also substitute strawberries for half of the amount of fruit)
  • 1 tsp. gluten free vanilla extract

Optional

  • 1/2 c. coconut flakes

Note

This is a conversion of my mama's tasty rhubarb cobbler. My husband prefers the strawberry rhubarb version because it is sweeter and not tart, but my kids and I like it either way.

Directions

1. Preheat oven to 350 degrees.
2. In a bowl, mix rice or almond flour with oats, brown sugar, cinnamon and butter. Stir until evenly combined.
3. Press half of the oat/sugar/flour mixture into a prepared 9x9 pan; press with fingers for an even layer.
4. In a pot, combine water, granulated sugar, cornstarch or arrowroot and vanilla. Over medium heat, bring to a rolling boil and allow to thicken for about 2 minutes.
5. Mixture will get very thick; stir constantly so you don't burn the mixture. Once thickened, mix in the rhubarb (and strawberries, if adding).
6. Evenly sprinkle remaining topping over rhubarb.
7. Bake uncovered for 1 hour.
