Grill roasted veggies

Ingredients

  • 1/2 bunch asparagus, chopped
  • 1-2 zucchini, chopped
  • 1-2 yellow squash, chopped
  • 1 red onion, chopped
  • 1-2 red, yellow and/or orange bell peppers, chopped
  • 3-4 cloves garlic, sent through press
  • 1/4 c. olive oil
  • sea salt & pepper to taste

Directions

1. Preheat & clean grill.
2. In a resealable bag, add all of the chopped veggies, garlic, olive oil and seasonings, seal and shake until all veggies are covered.
3. Throw veggies into a grill basket and cook while your other food is cooking, stirring occasionally.
4. Remove from grill and serve hot! *I like to make a ton of veggies on the grill and then package them up to take to lunch the following week.
