zucchini pizzas

  • 1 large zucchini, cut into rounds
  • 1 jar gluten free & sugar free pizza sauce (you can also use spaghetti sauce)
  • toppings of your choice (here I used mini turkey pepperoni)
  • mozarella cheese, shredded (can use non-dairy cheese)

1. Preheat oven to 350 degrees.
2. Clean & slice zucchini. Place on a wire rack on top of a rimmed cookie sheet (which allows bottom of zucchini to cook and any juices drip onto the cookie sheet so you don't have soggy pizza!)
3. Spread pizza sauce on zucchini rounds, add toppings and finish with a sprinkle of cheese on top.
4. Bake at 350 degrees for 15-20 minutes.
5. Remove from oven and eat!
