Ingredients
- 1/2 cup vegetable shortening
- 1/2 cup Brown sugar, packed
- 1/2 cup sugar
- 1 tablespoon flax meal + 3 Tbs water
- 1 1/2 - 2 cup cooked quinoa, cooled
- 3/4 cups sorghum flour
- 1/2 cup potato or tapioca starch
- 1/2 cup cornstarch or arrowroot starch
- 1/4 cup white rice flour
- 1/2 teaspoon Salt
- 1 teaspoon Baking powder
- 1 teaspoon baking soda
- 1 teaspoon gluten free vanilla extract
- 3/4 teaspoons Cinnamon
- 1/2 teaspoon xanathan gum
- 1 - 1 1/2 cup craisins
Note
The quinoa in this recipe takes on a crunchy texture so it almost tastes as if there are nuts in the recipe, but it is nut free. You sure could add nuts if you want too though!
Directions
1. | Cream shortening with sugars; add flax meal & water mixture and mix untill well combined. | |
2. | Add remaining ingredients and mix until combined. | |
3. | Scoop tablespoon sized scoops onto a greased cookie sheet. | |
4. | Bake 350 for 12-15 minutes or until golden brown. |
