Ingredients

  • 1 c. gluten free oats
  • 1 c. coconut
  • 1/3 c. vegetable or coconut oil
  • 1/4 c. honey (or use agave syrup for vegan option)
  • 1/2 tsp. salt
  • 1 tsp. gluten free vanilla extract
  • 1/2 c. pecans
  • 1/2 c. sunflower seeds
  • 1 c. dried fruits (I usually use dried cranberries & pineapple or raisins.)

Optional

  • Cinnamon to taste

Note

My mom's friend, Ronie, makes the BEST granola. This is a version of her recipe (I have halved the recipe and added my own tweaks) that I'm sure you'll love.

Directions

1. Mix vegetable oil, honey (or agave), salt & vanilla together; set aside.
2. Mix gluten free oats, coconut and nuts together.
3. Pour liquids over oat mixture and stir well.
4. Preheat oven to 325. Line large baking pan with foil.
5. Pour granola in a thin layer onto baking pan. Bake for about 30 minutes, stirring every 10 minutes or so. Keep an eye on it so it doesn't burn!
6. Once oats and coconut are toasted, remove granola from oven and mix in dried fruits.
7. Let cool and serve!
