pork tacos, carnitas, gluten free tacos
Ingredients
- I boneless pork butt roast, 3-4 lbs.
- 1 large onion, sliced
- 1 can tomatoes & chilis (if you are sensitive to tomatoes, use 1 small call green chilis and about 1/2 c. broth)
- 1 tsp. sugar
- 1 tsp. cornstarch
- 1 tsp. salt
- 3/4 tsp. ground cumin
- 1/2 tsp. dried red pepper, crushed
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. onion powder
Note
I found this recipe in a magazine, but it calls for a package of taco seasoning which always contains wheat ingredients. Here is my gluten free version. I hope you like it as much as my family did!
Directions
1. | Mix all dry spices together. | |
2. | Cut roast in half & rub spices liberally over roast. | |
3. | Put roast in crock pot, layering with sliced onion. | |
4. | Pour tomatoes & chilis over meat. | |
5. | Cover and cook on low for 6-8 hours. | |
6. | Remove fat from crock pot. | |
7. | Shred meat & serve on corn tortillas with dairy free sour cream, cilantro and salsa. | |
