Ingredients
- 1 c. wild rice mix
- 5 c. chicken or vegetable stock
- 1 lb. broccoli, chopped (frozen or fresh)
- 1-2 shredded carrots
- 1/2 onion, chopped
- 8 oz. cream cheese (I use the herb & garlic dairy-free kind--Tofutti brand)
- seasonings to taste
Optional
- 1 1/2 c. diced cooked chicken
Note
My good friend, Carrie, gave me this recipe and I modified it to be allergen free. I served this at a dinner party recently and I had so many people asking for the recipe--they had no idea it was gluten & dairy free! I hope you like it as much as my kids and I like it.
Directions
1.

| Bring broth & rice mix to a boil; reduce heat to a simmer and let cook for about 5 minutes. |

| Add onion, broccoli, carrot & chicken (if using) & simmer for about 10 minutes. |
3.

| Once veggies start to get tender, gradually mix in cream cheese until it melts. |
4.

| Heat through, stirring to ensure you don't have clumps of cream cheese. |
5.
|
| Serve with toast on a chilly day. Mmmmm! |
