Quinoa salad
I love couscous but when our kids were diagnosed with gluten intolerance, we kissed our couscous goodbye. This salad is a good alternate for couscous.
Ingredients
- 2 cups cooked quinoa
- 1-2 tablespoon Olive oil
- 1-2 tablespoon basalmic vinegar
- 3-4 green onion, diced
- handfulgrape tomatoes, halved
- 1/4 cup toasted almonds
- salt & pepper to taste
- sprinkle ofItalian seasoning
Optional
- feta cheese (if you can tolerate it)
Directions
1.

| Rinse quinoa and cook according to directions (I also added 1-2 cloves chopped garlic to the water as the quinoa was cooking). Fluff once cooked. |

| Add remaining ingredients. Toss together. Adjust seasonings as desired. |
3.

| Serve either hot or cold. |
