gluten/dairy-free coconut haystacks
Ingredients
- 4 Tbs. coconut milk
- 1/4 c. non-dairy butter
- 2 1/2 c. powdered sugar
- 3 c. shredded sweetened coconut
- 6 oz. non-dairy chocolate chips
Note
My family got the original recipe for these candies from a family friend, and I have modified it to be dairy free. We make these candies every Christmas (my dad LOVES these!).
Directions
1.

| Heat butter and milk in a saucepan until bubbly. Remove from heat. |

| Quickly add powdered sugar, whisking in. |

| Stir in coconut. |
4.

| Drop by the spoonful onto wax paper. Once all coconut mixture has been spooned out, form into haystack cone shapes. Let cool. |

| Once haystack cones are completely cooled and set, melt non-dairy chocolate chips over medium heat. |
6.
|
| Dip bottoms of coconut candies in chocolate and place back on wax paper. Allow chocolate to completely harden and cool. Keep stored in refrigerator in a resealable bag or airtight container. |
