I love couscous but when our kids were diagnosed with gluten intolerance, we kissed our couscous goodbye. This salad is a good alternate for couscous.


  • 2 cups cooked quinoa
  • 1-2 tablespoon Olive oil
  • 1-2 tablespoon basalmic vinegar
  • 3-4 green onion, diced
  • handfulgrape tomatoes, halved
  • 1/4 cup toasted almonds
  • salt & pepper to taste
  • sprinkle ofItalian seasoning


  • feta cheese (if you can tolerate it)


1. Rinse quinoa and cook according to directions (I also added 1-2 cloves chopped garlic to the water as the quinoa was cooking). Fluff once cooked.
2. Add remaining ingredients. Toss together. Adjust seasonings as desired.
3. Serve either hot or cold.
