Ingredients
- 2 cans gluten free chicken broth
- 1 large onion, chopped
- 8 oz. halibut fillet, skin removed
- 1 cup corn
- 14 oz coconut milk (or one can)
- juice of 1/2 lime
- 1/4 c. chopped cilantro
- avocado for garnish
- gluten free cajun seasoned salt, to taste
Optional
- 2 medium red potatoes, cleaned & diced
Directions
1.

| Bring broth and onions to boil in stock pot. |

| Poach halibut in liquid until cooked through, flipping once. DO NOT OVERCOOK! Remove fish from broth and set aside. |

| Add potatoes and corn and cook until potatoes are tender. |
4.

| Remove 1/2 of soup and blend with cilantro and lime juice. Pour blended mixture back into stock pot. |
5.
|
| Add coconut milk and heat through. Do not allow mixture to boil. |
6.
|
| Flake halibut and put back into pot. Heat through & season to taste with cajun seasoned salt. |
7.
|
| Serve in bowls and garnish with avocado and sprinkle a bit more cajun seasoning on top. |
