gluten free / vegan almond macaroons
Ingredients
- 1 c. almond meal (almond flour)
- 2/3 c. sugar
- 1 Tbs. rice flour
- 1 Tbs. flax meal + 3 Tbs. water
- 1 1/4 tsp. gluten free vanilla extract
- 1/4 tsp. gluten free almond extract
- 1/2 tsp. baking powder
Directions

| Mix flax meal with water, stir well and set aside. |

| Once flax meal & water has thickened, mix all ingredients in an electric mixer until well combined. |
3.

| Roll into 1" balls and place on greased cookie sheet. |
4.

| Bake in a preheated oven at 350 degrees for 10-15 minutes or until slightly browned. |
5.
|
| Let cool on cookie sheet for 5 minutes, then move to wire rack to cool completely. |
