Ingredients

  • 1 c. almond meal (almond flour)
  • 2/3 c. sugar
  • 1 Tbs. rice flour
  • 1 Tbs. flax meal + 3 Tbs. water
  • 1 1/4 tsp. gluten free vanilla extract
  • 1/4 tsp. gluten free almond extract
  • 1/2 tsp. baking powder

Directions

1. Mix flax meal with water, stir well and set aside.
2. Once flax meal & water has thickened, mix all ingredients in an electric mixer until well combined.
3. Roll into 1" balls and place on greased cookie sheet.
4. Bake in a preheated oven at 350 degrees for 10-15 minutes or until slightly browned.
5. Let cool on cookie sheet for 5 minutes, then move to wire rack to cool completely.
