Ingredients

  • 1 Pound Ground beef (Omit meat products or substitute with ground meatless crumbles for vegetarian/vegan option. )
  • 1 can corn
  • 1 can chopped olives
  • 1 small can green chilies
  • 1 cup yellow cornmeal
  • 1/2 cup corn flour
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 1 can petite diced tomatoes
  • 1 cup plain, unsweetened milk alternate
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • salt & pepper to taste
  • 1 cup shredded cheddar or vegan cheddar cheese

Directions

1. Saute meat (or meatless alternate) in a pan with a little olive oil, garlic and onion; drain any fat.
2. Mix remaining ingredients into "meat" mixture. Pour into greased 9x9x2 pan.
3. Sprinkle cheddar cheese or vegan cheddar cheese on top.
4. Bake 365 degrees for 1 hour.
