Ingredients
- 1/2 cup vegetable shortening
- 1/2 cup Brown sugar, packed
- 1/2 cup sugar
- 1 tablespoon flax meal + 3 Tbs water
- 1 1/2 - 2 cup cooked quinoa, cooled
- 3/4 cups sorghum flour
- 1/2 cup potato or tapioca starch
- 1/2 cup cornstarch or arrowroot starch
- 1/4 cup white rice flour
- 1/2 teaspoon Salt
- 1 teaspoon Baking powder
- 1 teaspoon baking soda
- 1 teaspoon gluten free vanilla extract
- 3/4 teaspoons Cinnamon
- 1/2 teaspoon xanathan gum
- 1 - 1 1/2 cup craisins
Note
The quinoa in this recipe takes on a crunchy texture so it almost tastes as if there are nuts in the recipe, but it is nut free. You sure could add nuts if you want too though!
Directions
| 1. | Cream shortening with sugars; add flax meal & water mixture and mix untill well combined. | |
| 2. | Add remaining ingredients and mix until combined. | |
| 3. | Scoop tablespoon sized scoops onto a greased cookie sheet. | |
| 4. | Bake 350 for 12-15 minutes or until golden brown. |
