Ingredients

  • I boneless pork butt roast, 3-4 lbs.
  • 1 large onion, sliced
  • 1 can tomatoes & chilis (if you are sensitive to tomatoes, use 1 small call green chilis and about 1/2 c. broth)
  • 1 tsp. sugar
  • 1 tsp. cornstarch
  • 1 tsp. salt
  • 3/4 tsp. ground cumin
  • 1/2 tsp. dried red pepper, crushed
  • 2 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder

Note

I found this recipe in a magazine, but it calls for a package of taco seasoning which always contains wheat ingredients. Here is my gluten free version. I hope you like it as much as my family did!

Directions

1. Mix all dry spices together.
2. Cut roast in half & rub spices liberally over roast.
3. Put roast in crock pot, layering with sliced onion.
4. Pour tomatoes & chilis over meat.
5. Cover and cook on low for 6-8 hours.
6. Remove fat from crock pot.
7. Shred meat & serve on corn tortillas with dairy free sour cream, cilantro and salsa.
