Ingredients
- 1 c. gluten free oats
- 1 c. coconut
- 1/3 c. vegetable or coconut oil
- 1/4 c. honey (or use agave syrup for vegan option)
- 1/2 tsp. salt
- 1 tsp. gluten free vanilla extract
- 1/2 c. pecans
- 1/2 c. sunflower seeds
- 1 c. dried fruits (I usually use dried cranberries & pineapple or raisins.)
Optional
- Cinnamon to taste
Note
My mom's friend, Ronie, makes the BEST granola. This is a version of her recipe (I have halved the recipe and added my own tweaks) that I'm sure you'll love.

Directions
1. | Mix vegetable oil, honey (or agave), salt & vanilla together; set aside. | |
2. | Mix gluten free oats, coconut and nuts together. | |
3. | Pour liquids over oat mixture and stir well. | |
4. | Preheat oven to 325. Line large baking pan with foil. | |
5. | Pour granola in a thin layer onto baking pan. Bake for about 30 minutes, stirring every 10 minutes or so. Keep an eye on it so it doesn't burn! | |
6. | Once oats and coconut are toasted, remove granola from oven and mix in dried fruits. | |
7. | Let cool and serve! |
