Greek chicken

Ingredients

  • 4 chicken breasts, butterflied
  • 1/2 c. feta cheese
  • 3-4 green onions, chopped
  • a handful of kalamata olives, sliced in half
  • 1/2 c. chopped or sliced sundried tomatoes
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 2 Tbs. olive oil

Optional

  • 1/4 c. parmesan

Directions

1. Preheat your grill.
2. In a bowl, mix all ingredients except the chicken and set aside.
3. Throw chicken on grill; flip and grill on the other side. If your chicken is uniform in thickness, this should only take a few minutes per side.
4. Once chicken is cooked through, turn grill off. Divide tomato/feta/olive mixture evenly between chicken breasts. Close grill and let cheese mixture heat through (3-5 minutes)
5. Plate and serve!
