zucchini pizzas
Ingredients
- 1 large zucchini, cut into rounds
- 1 jar gluten free & sugar free pizza sauce (you can also use spaghetti sauce)
- toppings of your choice (here I used mini turkey pepperoni)
- mozarella cheese, shredded (can use non-dairy cheese)

Directions
1.

| Preheat oven to 350 degrees. |

| Clean & slice zucchini. Place on a wire rack on top of a rimmed cookie sheet (which allows bottom of zucchini to cook and any juices drip onto the cookie sheet so you don't have soggy pizza!) |
3.

| Spread pizza sauce on zucchini rounds, add toppings and finish with a sprinkle of cheese on top. |
4.
|
| Bake at 350 degrees for 15-20 minutes. |
5.
|
| Remove from oven and eat! |
