Grain Free (Paleo) Chocolate Zucchini Bread

My good friend, Carrie, introduced me to Elena’s Pantry’s Zucchini Bread recipe a few years ago and I loved it. Since then I have made a few tweaks to my liking and the recipe is as follows. Enjoy!

Ingredients:

  • 1 1/2 cups superfine almond flour (I use THIS brand)
  • ¼ cup cocoa powder
  • ¼ teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 large eggs (I’ve used flax gel and it turns out okay, but it is very dense)
  • 2 tablespoons coconut oil, melted
  • ¼ cup local honey
  • ¼ teaspoon vanilla extract
  • 1 medium zucchini, peeled & chopped coarsely
  • 1/2 cup mini chocolate chips, divided (I use THIS brand)

I’ve loved No-bake cookies as long as I can remember and this was one of the first recipes I converted to be gluten free and dairy free after my son got diagnosed with food allergies. Plus, this recipe can fool people into thinking it is the “real” recipe…gets my husband every time!

Ingredients:
1/2 c. nondairy milk (I use full fat coconut milk)
2 c. sugar
3 Tbs. cocoa powder
1/2 c. non-dairy butter
3 c. gluten free oats

c. creamy peanut butter (use another nut butter or seed butter if you have peanut allergies)

Let’s be real…sometimes you just need a rich, ooey gooey chocolate brownie, am I right? I usually make brownies for my kids for Valentine’s Day and make them into heart shapes, but this year I couldn’t find my heart-shaped silicone mold. I honestly can’t remember if I gave it away before we did our home remodel or not. I was texting my sister, lamenting on how I couldn’t find the heart molds, and she said, “cut them out with cookie cutters”. Well, yeah, that would be a smart thing to do…and why the heck didn’t I think of that?! So, I baked the brownies in a regular square pan, cut them with heart cookie cutters and served them with berries. What a treat!

Gluten Free Coconut Cake

I found a recipe for coconut cake on Pinterest from Cooking Classy and it looked great, so I thought I’d convert it to be gluten free and make a few tweaks. My kids and coworkers loved the cake…some didn’t even know it was gluten free!

Ingredients

  • 3 cups gluten free all purpose flour (I use THIS one)
  • 1 Tbsp baking powder
  • 1/2 tsp. salt
  • 2 cups  sugar
  • 3/4 cup butter or nondairy butter, at room temperature
  • 1/4 cup coconut oil, melted
  • 1 can full fat coconut milk
  • 2 large eggs, at room temperature, yolks and whites separated, plus two more egg whites
  • 1/8 tsp cream of tartar
  • 1 1/2 tsp. coconut extract

Gluten Free Baked Oatmeal

Sorry this isn’t the best photo of baked oatmeal, but sometimes it’s hard to get a photo in before my dishes are devoured by a hungry husband or kids! When I was 16, I went to Kenya over the summer break and built a library for the local school with a group of teens. On the cliffs overlooking Lake Baringo, I fell in love with baked oatmeal and English tea. I wish I could find the recipe that our team leader’s wife used when we were there, but this is pretty close.
