Ingredients

  • 2 cucumbers, peeled & sliced thinly
  • 1 1/2 tsp. salt
  • 1/2 red onion, sliced thinly
  • 1 sliced jalapeno, seeds & membrane discarded
  • 2-3 Tbs sugar
  • 1/4 c. rice vinegar

Directions

1. Peel & slice cucumbers. Toss with salt.
2. Add remaining ingredients to cucumbers; stir well and refrigerate at least a few hours before serving.
