Ingredients

  • 1/2 c. sorghum flour
  • 1/3 c. tapioca starch
  • 1/3 c. superfine brown rice flour
  • 1 Tbs. flax meal + 3 Tbs. water
  • 1/4 c. vegetable oil or melted coconut oil
  • 1 c. nondairy milk (I used vanilla Blue Diamond almond milk)
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. gluten free vanilla
  • 1/2 - 1 tsp. ground cinnamon

Directions

1. Preheat waffle iron.
2. Whisk all ingredients together.
3. Cook until of desired color.
4. Serve with maple syrup and berries!

    Is there anything I could sub in place of the brown rice flour? In addition to gluten my lil guy with allergies is allergic to rice and oats. I would love to find a waffle recipe for him!

      Let me experiment with coconut and almond flour to see how they turn out…they’ll likely need a little more liquid with those alternate flours.
