gluten free halibut melts
Ingredients
- 2 c. diced halibut
- 1 c. mayo (I use the Veganaise--dairy and egg free)
- 8 oz. cream cheese (you can use Tofutti dairy-free brand)
- 1 small can green chilies
- 1 small onion, diced
- 3 gloves garlic, minced
- salt & pepper to taste
- Gluten free bread or buns
Note
You can make the halibut mixture in advance and serve it with gluten free crackers as well. I think the dip tastes even better the next day once the flavors have melded.
Directions
1.

| Saute onion, garlic and halibut in a little olive oil. |

| Once fish is cooked through, add remaining ingredients (except bread) to the pan; reduce heat to low and let simmer. |

| Preheat oven to 350 degrees. |

| Line gluten free bread or buns on a baking sheet and spoon halibut mixture onto bread. |
5.

| Sprinkle tops with parmesan or non-dairy parmesan style cheese. |
6.
|
| Turn oven to broil and place pan near the top of the oven by the broiling element. Keep an eye on the food so it doesn't burn. |
7.
|
| Once tops are nicely browned, remove from oven and serve hot...be careful biting into these, hot cheese on the top of your mouth can burn! |
