Who doesn’t love a great ice cream? One of my favorites is Ben & Jerry’s Coffee Heath Bar Crunch, but it is pretty expensive for a little pint. So, I decided to try making my own. This recipe is SOOOOO easy (literally, it takes less than 10 minutes to prepare), is egg-free and does NOT require an ice cream maker! Try it and let me know what you think!

Ingredients:

  • 1 serving’s worth of instant coffee of choice (I used 1 package of Starbucks Via)
  • 2 tsp. gluten free vanilla extract
  • 1 pint heavy whipping cream
  • 1 can sweetened condensed milk

Gluten Free Seasoned Fries

Who doesn’t love French fries? Nobody! Well, that’s not true…my 8 year old HATES French fries for some reason. He always has. What a weird-o. My 5 year old, on the other hand, would eat them for every meal if we’d let him. I personally used to LOVE Arby’s curly fries, so I scoured the internet to find a knock-off recipe that I could convert. You can make these with curly potatoes using a spiralizer or regular cut fries, and keep in mind that you can control how much seasoned coating you get by the thickness of your batter…play with the amount of water until you get it to your liking.

I’m a sucker for Chinese food, but I haven’t been able to really eat any since it is hard to know what ingredients are used at restaurants. I found a recipe that looked good and I modified it to my liking…and my kids devoured it!

Ingredients
  • 4 boneless skinless chicken breasts, sliced thinly
  • 3 Tbs. arrowroot starch
  • ½ tsp black pepper
  • ¼ c. coconut aminos mixed with ¼ c. water (or ½ c. gluten free soy sauce)
  • 4 Tbs. rice vinegar

Gluten Free Chicken Noodle Soup

This past week our house has been full of sickies…between me and my oldest son, we packed in some serious chicken noodle soup! Chicken noodle soup is so easy to make and, for some reason, it is so comforting to eat. I hope you are healthy and well, but if not, try this chicken noodle soup and feel better soon!

Ingredients:

  • 3 Tbs. olive oil
  • 1 large sweet onion, diced
  • 5-6 carrots, cleaned and sliced
  • 5-6 stalks celery, sliced
  • 4 cloves garlic, sent through a press
  • 1 tsp. crumbled bay leaf
  • 2 quarts chicken stock
  • 1/2 cooked chicken, chopped (great use for leftovers!)

Apple Pie Moonshine

I’ve never had “real” moonshine, and I don’t have a distillery set up at my house, so I found some homemade recipes for moonshine, using pre-distilled booze, and mixed them up unto something delicious that reminds me of good ol’ American apple pie! I hope you enjoy it as much as my friends have!

Ingredients:

  • 1 gallon of apple cider
  • 1 cup white sugar
  • 1 cup brown sugar
  • 6 cinnamon sticks
  • 6 whole cloves
  • 2 cups Everclear (Everclear is illegal in some states, like Washington State. Find a high proof, unflavored grain alcohol if you can’t get Everclear)
  • 2 cups vanilla vodka
